Vegan and gluten-free pancake baking mix

How do pancakes for breakfast, brunch, lunch and dinner sound? We’re absolutely wild for these soft, squidgy slices of heaven and could happily eat them all day. If you feel the same, we think you’ll be rather won over by our vegan, gluten-free and all natural pancake mix which makes pancake scoffing easier and healthier.

Our pancake baking mix takes you from opening the box to flipping pancakes (hands up if you can get it over in one!) in a matter of minutes. You’ll need only a few ingredients, plus a mixing bowl and whisk – then you’re set. Pour the mixture as thinly or thickly as you like, depending on whether you prefer your pancakes extra cakey or crispy and thin. But, don’t worry, thanks to the gluten-free, natural ingredients we use you’ll still feel bouncy after eating them – even bouncier some might say!

Our vegan pancakes are flavoured with cinnamon and we think work wonderfully well with homemade cashew mousse and coconut and vanilla popcorn. If that isn’t your thing, you could douse them with nut butter, cover with banana slices or simply sprinkle on sugar – the choice is all yours!

    Organic chickpea flour, organic tapioca flour, organic brown rice flour, organic buckwheat flour,  organic unrefined cane sugar, gluten-free baking powder, cinnamon (2%), baobab powder (2%).

    Just add 2 eggs and any type of milk (60ml) or 140ml of your favourite dairy-free milk for a vegan option!

    Instructions:

    1. Crack eggs into a deep bowl, add milk and whisk together. Vegan: just add dairy-free milk.
    2. Add pancake mix into the eggs and milk, and whisk until combined with no lumps.
    3. Heat a frying pan over a high heat and add a small amount of vegetable/sunflower or coconut oil to grease the pan. Once hot, reduce to a medium heat.
    4. Use a large spoon to pour mixture into the pan. Wait until bubbles start to appear, then flip the pancake over and cook on the other side until brown. Add some berries or honey on top for a heavenly breakfast!

     One pack makes 15 pancakes but you don’t have to use it all at once (the pack is resealable!). The pack contains detailed instructions for 1/2 pack.
