Ever since we started Superfood Bakery (and made 1000's of different healthy cookies/pancakes/muffins/energy balls), we noticed that gradually our appreciation of fatty, buttery, sugary desserts went down. Our taste buds started appreciating more subtle flavours and picking up distinct, sometimes barely noticeable hints of spices...
We also fell in love with creating energy ball recipes! Easy, wholesome and guilt-free, we are all about these beauties!
Recipe (makes 10 energy balls)
Pistachios 10 tbsp
Dates 7 (add less if you don't like it sweet)
Desiccated coconut 10 tbsp
Gluten-free rolled oats 3 tbsp
Flaxseed 3 tbsp
Maca 1.5 tbsp
Coconut oil 3 tbsp
Agave nectar 4 tsp
Combine all ingredients in a blender and blitz until combined. Taste for sweetness and add coconut oil and agave syrup (if desired). Roll into balls and refrigerate for up to 10 days in an airtight container. Enjoy!
